A 2007 Caol Ila 16-year-old bottled without colouring or chill filtration by Signatory Vintage for their Cask Strength Collection - this is Cask 205, a sister cask of a previous Signatory Caol Ila we had, cask 204, which was bottled at 15 years old earlier in 2023.

Just like its earlier counterpart, this Cask 205 16-year-old Caol Ila 2007 has benefited from being finished in a first fill Oloroso sherry cask, which has given it a beautiful deep chestnut colour. Cask 205 yielded an impressive 697 bottles at an oomphy but not overpowering 53.3% natural cask strength, and will be an absolute treat for fans of the classic smoke and sherry combo.
