 Pernod anise or pastis as it is also known is an aniseed based spirit made famous by Henri-Louis Pernod on the cafe terraces of 19th century Paris.

The flavour for this spirit comes mainly from the distillation of star anise and but also a mix of some 14 other herbs.

This iconic drink is best served long with ice-cold water.
