The 21-year-old iteration in Macallan's Fine Oak series, which was later rechristened Triple Cask Matured. The triple cask types in question are American and European sherry-seasoned oak, and ex-bourbon American oak casks.
The Fine Oak range took a while for whisky fans to come to terms with because it wasn't what people expected of Macallan back in 2004, but the 21-year-old has always been one of the best expressions in the series, and of course if it was from any other distillery (that hadn't spent the preceding decades telling people they only ever matured their whisky in sherry casks) it would probably get more of the recognition it deserves. An elegant after-dinner sipper.
