The Yonezawa family have been producing sake at their Akashi Brewery since 1856, and began distilling spirits for sake production in 1918. In 2017, they replaced their old stills with new copper pot stills from Forsyth's in Rothes and soon afterwards commenced production of their own single malt whisky at their new Kaikyo distillery, which is on the same site as the Akashi sake brewery.
While they wait for their own spirit to mature, owner and master blender Kimio Yonezawa has created this Hatozaki blended whisky from the company's existing stocks of Japanese and imported malt and grain whiskies. Hatozaki's component whiskies are aged up to 12 years and the blend has a minimum malt whisky content of 40%.
