An old bottle of single cask Dalmunach 2016 4-year-old Speyside single malt whisky released in 2021 by indie bottlers Duncan Taylor for their Octave Cask range.

This Duncan Taylor bottling of Dalmunach was only the second Dalmunach we listed on Whisky-Online. Dalmunach is Pernod's big new distillery constructed on the site of the old Imperial distillery in Speyside in 2014.

This Dalmunach 2016 has undergone Duncan Taylor's special Octave process whereby whisky is reracked into small Octave casks recoopered from sherry butts. Octaves generally hold around 50-60 litres, and typically yield just 60-90 bottles.

The particular Octave for this Dalmunach was a second fill, having previously hosted some of Bunnahabhain's peated Staoisha spirit, which has given the Dalmunach a slightly smoky edge over the six months of Octave maturation. Just 75 bottles of this Dalmunach 2016 came out of the cask.

The official tasting notes for this Dalmunach mention soft sherry, mochaccino coffee, sweet peat smoke and nutty, gentle spice. Sounds terrific, we're looking forward to this one.
