Dalmore Dominium is assembled from whiskies matured initially in American oak ex-bourbon casks before a finishing period in first fill Matusalem sherry casks from the famed Gonzalez Byass, one of Jerez's finest bodegas. Gonzalez Byass's Matusalem is a legendary Oloroso sherry aged at least thirty years before being bottled, so these casks are truly special.
