Chapter Three: The Moon in indie bottler Pendulum Spirits' Ghost Piper of Clanyard Bay fable is represented by Dailuaine distillery. This is the second release of Dailuaine we've had from Fable.
The first Fable Dailuaine we got was a 2008 vintage bottling; this second edition is a Dailuaine 2010, bottled as an 11-year-old from a single hogshead (#308828) that yielded 230 bottles at 59.9%. As before, the bottle has Bolivian artist Hugo Cuellar's excellent designs for the Fable series, and we're pretty certain these bottles are going to fly.

Tasting Notes
Nose: Barley sugars, citrus, peach, and tropical fruits, pineapple. Green apple, bold, buttered burnt toast . Also, some spicy notes, cinnamon.
Palate: Big obvious vanilla sweetness plus some toasted malt, toasted wood spices, all spice, honey, distant bees wax and a bit minerally - earthiness. Thick and creamy mouthfeel, apples again.
With water added - green grass, freshness comes through. Unripen green fruit.
Finish: Sweet red apples, more honey and a bit of wax, some cereals, vanilla, If these come through now coconut here as well some nice beeswax & pepper. Also, sour and bitter as a grapefruit. Light pepper, spicy.
