A deep, dark 2005 Allt-A-Bhainne 16-year-old, finished in a Pedro Ximenez sherry puncheon cask and bottled in 2022 by Alistair Walker Whisky Co. for their Infrequent Flyers range at its extraordinary cask strength of 62.3%.
Allt-A-Bhainne is a relatively obscure modern Speyside distillery whose owners Pernod Ricard used its output for their 100 Pipers blended Scotch whisky until 2018, when the first ever ongoing official Allt-A-Bhainne was released. This 16-year-old Allt-A-Bhainne was distilled in 2005, after the distillery had come out of a brief period in mothballs that began in 2002 following Pernod's acquisition of Chivas Bros.

Tasting Notes
Colour: Midnight at the oasis.
Nose: Oooft, what a nose! Complex like calculus, with a battle raging between sweet and savoury! Burnt toffee, BBQ sauce, balsamic glaze, chocolate coated chorizo balls (I swear I had these at a wedding in Spain).
Palate: Viscous, rich and full-bodied. Dark chocolate and fudge to the fore, alongside a curious but most welcome sweet balsamic presence. Quite a spicy dram; cracked black pepper and ground cinnamon are not shy here. Honourable mentions too for liquified brown sugar, peanut butter and cocoa powder, which all contribute.
